Terror Level Red Potato Salad

We were recently invited to a party in Lexington at Nicole's coworker's newly decorated home. Besides taking mango salsa, banana cream pies, and chocolate chip cookies, we took this delectable dish. It was a hit, particularly with those who do not like traditional potato salad with eggs and lots of mayo. We even got this remark, "ooo this is great, I just hate mayonnaise!" For those of you who like the tried and true, I have only one suggestion for you "don't say you don't like it until you try it." Yummmmmmmmy!


6 or 7 Red Potatoes
1 pkg bacon
1/2 cup mayonnaise
1 Tbsp red wine vinegar
3 stalks of celery
Bunch of chives
1 Tbsp Dijon or whole grain mustard
3 Tbsp Curry Powder (homemade or McCormick’s Hot Madras)

Fry Bacon

Cut potatoes into 1” cubes. Boil 8 or 9 minutes. Drain and Cool.

Mix mayo, mustard, vinegar, and curry

Chop celery and chives.

Add ingredients to potatoes and mix.

Salt and pepper to taste.
